Just installed a new 3 way gauge including exhaust temp. How long should I wait for the temperature to go down before I shut the engine down? Or what should the exhaust temp be before I shut the engine down?

The reasons to let the temps come down are twofold:

1. Let the turbo spool down, and

2. Let the turbo oil path cool to prevent overheating the oil.

I let mine idle until the temp reaches 250°F or lower.

I think it all depends on where the temperature send is located. I shut mine down at 400-450. I have done this for 95K miles. (I have 170K total now) When I start up in the mourning, the
EGT will go up to 250-300 just on idle before any driving.

My temp sender is 3" aft of the turbo. Not the most ideal place but it will not get temp sender pieces in the turbo if it fails.
