Doug, I usually have sandwiches for lunch and something that can be cooked on the grill for supper.

I carry several days' worth of food (worthwhile if one is stalled at a repair shop).

I usually make tuna salad, egg salad, and/or potato salad. Summertime, I make gazpacho, which is nutrient-dense and tasty. In addition, I carry canned and freeze-dried meals (again, a bonus, as my reefer finally died on the last trip). I also fry bacon in 1-lb. lots, and that can be microwaved. I have a hot dog cooker which rides with me, and a Canadian bread toaster that goes onto the stove burners.

Many RV parks aren't near restaurants, and I don't pull a toad, so being able to eat aboard is useful.

Yeah, same here. Those are two of our favorites. Our favorite gazpacho recipes are posted on the recipe section here, and our fave egg salad recipe will be there soon.

We also carry kippered herring for snacks or a herring salad sandwich spread. Being generator haters, we pan-toast our bread.
