Tom and JulieShe is fine - got a knee replacement and has no pain or limitations. She did, and everyone thinking about such must, do the physical therapy with a determined passion and not just take it easy. The therapy is the other 50% of the cure.

Steve VWDitto on the physical therapy! VERY important for knees.
My mother (83) had both hips replaced a while back, and one knee on Jan 20. She says PT was not fun but she has full range of motion and full use. I know of others who did not work as hard and never got full use.
Glad to hear things are going well.

Rusty Nancy Johns' Easy GazpachoWe had Nancy's gazpacho at Creekwood Farms and again at Chattanooga - delicious, and far easier than the recipe I'd been using:
Mr. & Mrs. T's Bold 'n' Spicey Bloody Mary Mix (or Zinzang's)
Finely chopped bell peppers
Finely chopped Cucumber
Finely chopped onion
Dash of vinegar
Optional:
Dash of Worcestershire sauce
Hot sauce
Garlic powder
Finely chopped hard-boiled eggs
Finely chopped jalapenos
Finely chopped pimentos
Combine ingredients and refrigerate.
This is as tasty as the recipe I used, which involve sieving tomatoes, and took 2 hrs to make.

Regal BlueSpoon Bread Tamale Bake Recipe
TOTAL TIME: Prep: 25 min. Bake: 30 min.
MAKES: 8 servings
Ingredients
1-1/2 pounds lean ground beef (90% lean) or turkey burger
1 large onion, chopped
1 small green pepper, chopped
1 garlic clove, minced
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups frozen corn
1 can (2-1/4 ounces) sliced ripe olives, drained
4-1/2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup cornmeal
1 cup water

1-1/2 cups 1%, 2% or whole milk, divided
1/2 cup cornmeal
1/2 teaspoon salt
1/2 cup shredded monterey jack cheese
2 tablespoons butter
1/2 cup egg (2)
Directions
In a Dutch oven coated with cooking spray, cook the meat, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Stir in the tomatoes, corn, olives, chili powder, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
Combine cornmeal and water until smooth; gradually stir into the pan. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally. Transfer to a 2-1/2-qt. baking dish coated with cooking spray.
In a small saucepan, bring 1 cup milk to a boil. Combine the cornmeal, salt and remaining milk; slowly whisk into boiling milk. Cook and stir until mixture returns to a boil. Reduce heat; cook and stir for 3-4 minutes or until slightly thickened.
Remove from the heat; stir in cheese and butter until melted. Stir in eggs. Pour over meat mixture. Bake, uncovered, at 375° for 30-40 minutes or until topping is lightly browned. Yield: 8 servings.
Ingredients and preparation
Ingredients that are used include beef and ground beef, pork, chorizo, chicken, beans, cheese, cornmeal, corn, beans, black olives, onion, garlic, tomato, bell peppers, chili peppers, salsa, butter, seasonings such as chili powder, salt and pepper. Standard fine cornmeal can be used, as can masa harina, a corn-based tortilla flour. Cheese used may be used to top the dish, and can also be inside of the pie.
