Rusty Cucumber Onion Salad4 Large cucumbers, peeled and thinly (1/8") sliced
¾ Medium onion, thinly sliced and chopped
2 cups White vinegar
1½ cup Sugar
1 cup Water
1 tbsp Worcestershire Sauce
1 tsp Ground Cayenne pepper
¼ tsp Ground black pepper
~3 TBSP Dried parsley flakes
Combine all ingredients except cucumbers, onion, and parsley and heat until sugar melts.
Let cool until warm to the touch.
Layer cucumber and onions in a shallow (4") sealable container and sprinkle each layer with parsley flakes.
Stir, then gently pour the liquid into a corner of the container. Refrigerate overnight, flipping the container at least once to ensure thorough marinading.

Rusty Fried Dill PicklesMilk Mixture1 Egg, beaten
1 cup Milk
1 TBSP Flour
1 TBSP Worcestershire sauce
Mix in a small bowl
Flour Mixture1 cup All-purpose flour
¾ tsp Ground black pepper
Mix in a small bowl
1 32 oz. Jar Oval-sliced dill pickles
~16 oz. Vegetable oil
Heat oil in a deep fat fryer to 350°F or 1/2” deep in a skillet on medium-high heat
Slightly-pat dry pickles on paper towels, dip in milk mixture, then flour mixture, then fry.
Pickles will turn a light golden-brown when done. Remove with a slotted spoon or tongs and drain on paper towels. Serve with your choice of dipping sauce.

Nick Cagle Italian Olive Spread on French Bread½ cup Mayonnaise
½ cup (1 stick) butter, softened
½ teaspoon garlic powder
4 green onions, chopped
1 cup chopped black olives
2 cups (8 ounces) shredded mozzarella cheese
2 loaves french bread, split into halves lengthwise
Preheat the oven to 350°. Combine the mayonnaise and butter in a bowl and mix until smooth. Add the garlic powder, green onions, olives and cheese and mix well. Place the bread halves cut side up on a baking sheet. Spread each half with the cheese mixture. Bake for 15 minutes. Serves 32.
This is for Marvin and Doris from Donna. I will also add that if you are feeding cajuns it will only feed 8, not 32.

Nick Cagle Mango Tomatillo Salsa1 12 oz. can tomatillos, drained
1/4 cup pineapple juice
1/4 cup orange juice
1/4 cup white vinegar
4 teaspoons minced garlic
1 teaspoon red pepper flakes
1/4 cup chopped cilantro
1/4 cup fresh lime juice (about 2 limes)
3 small or 2 large ripe, but firm mangoes, peeled, pitted and diced small
1 red onion, diced small
1 red bell pepper, diced small
In a blender or food processor, puree the tomatillos, pineapple and orange juices, vinegar, garlic, red pepper flakes, cilantro, and lime juice. Put the mangoes, onion, and bell pepper in a medium bowl, add the puree and mix well. You may substitute papayas for the mangoes. This one is great with any type of seafood, particularly shrimp and scallops, or with Tostitos.
This has been served at the Annual Ugly Betty Memorial Day Barth Gathering and Barbeque every year. If Danny is going to be at your gathering you may want to double the recipe.

Marvin+Doris CALA CAKEStired of bacon and pancakes for breakfast?
Try a New Orleans favorite.
3 cups water
1/2 tsp salt
1/2 cup long-grain rice
1 pkg dry yeast
1/2 cup warm water
3 eggs
1/2 cup sugar
1 cup flour
1/2 cup cinnamon or nutmeg (your taste)
6 cups oil for frying
powdered sugar and cane syrup
Boil 3 cups of water and salt. Add rice, cook until soft and slightly mushy.
Disolve yeast in 1/2 cup warm water. Add rice, stir well. Cover with plastic wrap and let sit for 4 hours or overnight in warm place.
Beat eggs with sugar, flour, cinnamon (or nutmeg) and fold into rice mix, make thick batter. Let rise 30 minutes.
Heat oi to 360 degrees F. Drop batter by spoonfuls into hot oil and cook about 3 minutes until golden brown. Sprinkle with powdered sugar and serve with syrup.

Doug SmileyDIY Microwave Rich and Creamy HOT Chocolate
1 (12-ounce) bag (2 cups) semisweet chocolate chips
1 cup heavy cream
1/4 teaspoon salt
Microwave chocolate on HIGH, cream and salt in large bowl, stirring
occasionally, until smooth, about 2 minutes.
Refrigerate until firm, about 2 hours.
Roll 3 tablespoons chilled chocolate mixture into ten 2-inch balls.
Individually wrap balls in plastic wrap and transfer to zipper-lock bag.
Refrigerate for 5 days
or freeze for up to 2 months.
To make 1 cup of hot chocolate:
combine in large mug:
1 unwrapped chocolate ball
1 cup whole or lower-fat milk
Microwave on high,
stirring occasionally, until smooth, about 2 minutes.
Serve and enjoy...

Rusty Horseradish-infused VodkaWe can blame Tom Johns for this one - at the Cagles' 50th, he treated us to Bloody Marys made with the
Referent commercial product - which isn't available here in Florida.
750 ML Vodka
~3" chunk of fresh horseradish root
2 TBS peppercorns
Peel and slice the horseradish into ¼"-½" slices. Put all the ingredients into a sealed container (I use apothecary jars). Soak for 3 days to a month. Strain into the original bottle.
Sip neat or in Bloody Marys:
1½ oz. Vodka
Generous dash of Lea & Perrins Worcestershire Sauce
Liberal dash of celery salt
Dash of garlic powder
½-1 TSP lemon (or lime) juice
Tobasco Sauce to taste
V8 Juice (Regular or Spicy; if tomato juice, Campbell's is best)

I have a friend who has horseradish. I think this is something I'll have to try.
You are correct with the V8 for Bloody Marys it also makes great Bloody Beer! Interesting fact low sodium V8 Spicy is high in potassium. Better than bananas for leg cramps.

Drain meat.
Saute one green pepper with one onion diced. I like to add mushrooms garlic red pepper as well. Clarify the onions and aldente the peppers. Drain if left over butter. salt and pepper to taste.
1 cup of noodles or so also cooked aldente
Mix ingredients and add 2 cans of condensed Campbells tomato soup one can of cream corn and one can of nugget corn. Drain the nugget corn before adding.

Feeds a lot of people cheep. My grandmother from the Depression era used it to feed her 7 children.

Marvin+Doris SAMOA CHEESECAKE BITES12 Samoa Girl Scout Cookies (Walmart has a great generic cookie that works great)
2x8oz cream cheese, softened
1/2 cup sugar
2 eggs
1 tsp vanilla
Caramel ice cream topping, shredded sweet coconut (toasted) and melted chocolate for topping
Preheat oven to 350F, line muffin tin with paper liners for cupcakes
put one cookie in bottom of liner
Beat cream cheese, sugar until smooth
Add vanilla and eggs, mix
Spoon batter over cookies
Bake 15-18 min or until set
Let cool and refrigerate several hours before serving
Top with caramel, coconut and melted chocolate
ENJOY
