As promised, here's Suzy's favorite.
Ingredients;
2 lb.ground turkey
2 pks. Chili-o mix
1 large onion, chopped
2 16 oz. cans stewed tomatoes [not drained]
1 15 oz. can black beans [drained & rinsed]
1/4 cup pepper rings, chopped
8 oz. pack sharp cheese
8 oz. pack jack cheese
1 bunch green onions, chopped
1 tsp. cumin
Prep;
In large skillet brown turkey & drain.
Add Chili-o, undrained tomatoes, & cumin.
Cook until liquid is reduced.
Place 1/2 of meat mixture in 9x13 glass casserole dish, layer can of black beans, then chopped onion, 1/2 of each cheese, & pepper rings. Add rest of meat mixture.
Bake at 350 for 30 minutes.
Top with remaining cheese and green onions. Return to turned off oven for 5 minutes until cheese is melted.
Serve with sour cream and Tortilla chips.
Of course, any Mexican dish can have black olives in it, we just don't happen to like them.
